Easy Hungarian Cottage Cheese Strudel (Túrós Rétes)

Ingredients:

  • 1 pack phyllo dough or strudel pastry
  • 400 g cottage cheese (túró or ricotta as substitute)
  • 2 eggs
  • 80–100 g sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional)
  • 2–3 tbsp sour cream
  • 2–3 tbsp semolina or breadcrumbs
  • 50 g melted butter

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix cottage cheese, eggs, sugar, vanilla, lemon zest, and sour cream.
  3. Add semolina or breadcrumbs to thicken the filling.
  4. Lay out phyllo dough and brush each sheet lightly with melted butter.
  5. Spread the filling evenly along one edge.
  6. Roll tightly into a log shape.
  7. Place on a baking tray and brush the top with butter.
  8. Bake for 25–35 minutes, until golden and crisp.
  9. Let cool slightly before slicing.
