🍰 Esterházy Cake (Esterházy torte)

Ingredients

Layers:

  • 6 egg whites
  • 150 g sugar
  • 150 g ground walnuts (or almonds)
  • 1 tbsp flour

Cream:

  • 6 egg yolks
  • 200 g sugar
  • 250 ml milk
  • 200 g butter
  • 1 tbsp vanilla
  • 1 tbsp cornstarch (or flour)

Topping:

  • White chocolate (melted)
  • Dark chocolate (for decoration)

Instructions

  1. Beat egg whites + sugar until stiff.
  2. Fold in nuts + flour.
  3. Bake thin layers at 180°C for 8–10 min.
  4. Cook milk, sugar, yolks, vanilla, and cornstarch until thick. Cool.
  5. Beat butter, mix with cooled cream.
  6. Layer cake with cream between each sheet.
  7. Cover top with white chocolate and decorate with dark chocolate.
  8. Chill 4–6 hours before serving.
