🇭🇺 Hungarian Shortbread (Omlós Sütemény)

🧾 Ingredients

  • 500 g all-purpose flour
  • 250 g butter (cold or softened)
  • 200 g sugar
  • 2 egg yolks
  • 1 packet vanilla sugar (or 1 tsp vanilla extract)
  • 1 tsp baking powder
  • Pinch of salt
  • Zest of 1 lemon (optional)
  • 1 jar apricot jam (for filling)

👩‍🍳 Instructions

  1. Mix flour, baking powder, sugar, vanilla, salt, and lemon zest.
  2. Add butter and egg yolks, then knead into a soft dough.
  3. Divide dough into two parts and chill for 20–30 minutes.
  4. Roll out one half and place in a baking tray.
  5. Spread a thick layer of apricot jam on top.
  6. Grate or crumble the second dough layer over the jam.
  7. Bake at 180°C (350°F) for 30–35 minutes until golden.
  8. Cool completely, then cut into squares.
