Hungarian Apple Cake (Almás Pite)

Ingredients:

Dough:

  • 400 g all-purpose flour
  • 200 g butter (cold, cubed)
  • 100 g sugar
  • 1 egg
  • 1 tsp baking powder
  • Pinch of salt
  • 2–3 tbsp sour cream or milk

Apple filling:

  • 1–1.2 kg apples (grated)
  • 80–120 g sugar (to taste)
  • 1–2 tsp cinnamon
  • 1 tbsp lemon juice
  • 1–2 tbsp semolina or breadcrumbs (to absorb juice)

Instructions:

  1. Mix flour, baking powder, sugar, salt, and butter until crumbly.
  2. Add egg and sour cream (or milk) and knead into a soft dough.
  3. Divide dough into two parts, wrap, and chill for 30 minutes.
  4. Grate apples and squeeze lightly to remove excess juice.
  5. Mix apples with sugar, cinnamon, and lemon juice.
  6. Preheat oven to 180°C (350°F).
  7. Roll out one dough piece and place in a baking tray.
  8. Sprinkle semolina or breadcrumbs over the base.
  9. Add apple filling evenly.
  10. Cover with second dough layer and press edges.
  11. Bake for 35–45 minutes until golden.
  12. Let cool, then slice.
