Ingredients:
- 250 g all-purpose flour
- 2 eggs
- 500 ml milk
- 100 ml sparkling water
- 1 tbsp sugar
- 1 tbsp vegetable oil
- Pinch of salt
Instructions:
- In a large bowl, whisk together the eggs, milk, sparkling water, sugar, oil, and salt.
- Gradually add the flour, whisking until the batter is smooth and lump-free.
- Let the batter rest for 15–20 minutes.
- Heat a lightly greased non-stick skillet over medium heat.
- Pour a small amount of batter into the pan and swirl to coat the bottom thinly.
- Cook for 1–2 minutes, then flip and cook for another 30–60 seconds.
- Repeat with the remaining batter.
