They come together quickly, making them perfect for an elegant dinner without spending hours in the kitchen. The scallops develop a beautiful golden crust while staying tender and juicy inside.

🧂 Ingredients

  • 2 lb large sea scallops, patted completely dry
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • ¼ tsp red pepper flakes, optional
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley, chopped

👩‍🍳 Instructions

1. Prepare the Scallops

Pat the scallops very dry with paper towels. Removing excess moisture is important because it helps them develop a beautiful golden crust.

Season both sides lightly with salt and black pepper.

2. Sear the Scallops

Heat the olive oil in a large skillet over medium-high heat.

Once the pan is hot, carefully add the scallops in a single layer. Avoid overcrowding the pan; cook in batches if necessary.

Sear for about 2–3 minutes per side, or until deeply golden brown and cooked through.

Transfer the scallops to a plate.

3. Make the Lemon Butter Sauce

Reduce the heat to medium.

Add the butter to the same skillet. Once melted, add the minced garlic and red pepper flakes.

Cook for about 30 seconds, stirring constantly so the garlic doesn’t burn.

Add the lemon zest and fresh lemon juice. Stir well, scraping up the flavorful browned bits from the bottom of the pan.

4. Finish the Dish

Return the scallops to the skillet and gently spoon the lemon butter sauce over them.

Cook for another 30 seconds to 1 minute, just long enough to coat the scallops.

Sprinkle with fresh parsley.

🍋 Why You’ll Love These Scallops

The combination of garlic, butter, and fresh lemon creates a bright and flavorful sauce that perfectly complements the naturally sweet flavor of sea scallops.

The key is getting the skillet hot enough to create that golden crust without overcooking the scallops.

💡 Tips for Perfect Scallops

Dry them well.
Wet scallops tend to steam instead of sear.

Don’t overcrowd the pan.
Give each scallop enough room to make contact with the hot skillet.

Use a hot pan.
A properly heated skillet helps create that beautiful caramelized exterior.

Don’t overcook them.
Scallops are best when they’re just cooked through and still tender.

Add lemon at the end.
Fresh lemon juice keeps the sauce bright and prevents the flavor from becoming dull.

🍽️ What to Serve With Lemon Butter Scallops

These scallops pair beautifully with:

  • Garlic mashed potatoes
  • Steamed asparagus
  • Rice pilaf
  • Roasted vegetables
  • Angel hair pasta
  • Crusty bread
  • A fresh green salad

For a simple dinner, serve them over pasta and spoon the extra lemon butter sauce over the top.
